Thanksgiving Treats

Watermelon and Feta Salad

Ingredients
1 whole seedless watermelon, cubed
½ pound halal feta cheese, cubed
½ cup balsamic vinegar

cup pure cane sugar
fresh mint, chopped
cracked black pepper
extra virgin olive oil
Directions
1. Prepare balsamic reduction. Heat small sauce pan over
medium heat; add balsamic vinegar and sugar. Bring mixture
to a quick boil, then reduce flame to low and simmer for
8 minutes. Cool and refrigerate before serving.
2. Plate watermelon and feta. Garnish with mint and add cracked
black pepper. Drizzle with extra virgin olive oil.
3. Drizzle with balsamic reduction and serve immediately.
